I first tried Tuna Melt during my waitressing days at a Jersey diner. The combination of surdough bread, savory tuna, cheese, fresh tomatoes and onions stirred memories of my Ghanaian heritage. This unforgettable dish now inspires me to create my own version with a touch of Gloria's Shito.

I fondly recall the the Turkish Pizzeria by Buchanan Galleries in Downtown Glasgow, a spot my brothers and I often visited with our dad. The shawarma meat and caramelized veggie pizza, has etched itself in my memory. Cheers to the happiness of sharing a meal with loved ones!
