Making bagels at home is worth it. The dough is simple, the process is calm, and the payoff is fresh, chewy bagels that taste like something. Mixing Shito Shake and Sprinkle into the everything topping gives them heat and depth you don’t get from the usual version.
What you will need:
- 4 cups bread flour, plus extra for kneading
- 1 tablespoon sugar
- 2 teaspoons salt
- 1 packet (2 ¼ tsp) instant yeast
- 1 ½ cups warm water
- 2 tablespoons honey (for boiling water)
- 1 egg white, beaten (for brushing)
- 2 tablespoons sesame seeds
- 2 tablespoons dried minced onion
- 2 tablespoons dried minced garlic
- 2 tablespoons poppy seeds
- 1–2 tablespoons Gloria’s Shito Shake and Sprinkle Seasoning
Here is how:
- Prepare the dough.
Stir flour, sugar, salt, and yeast in a large bowl. Add warm water and mix until a dough forms. Knead on a floured counter for 8–10 minutes until smooth.
- Let it rest.
Put the dough in a greased bowl, cover, and let rise for an hour until doubled.
- Shape the bagels.
Punch it down and divide into 8. Roll into balls, then press a hole through the middle and stretch into bagel shapes.
- Boil the bagels.
Boil water with honey. Drop bagels in for 1 minute per side, then transfer to a baking sheet.
- Mix the seasoning.
Mix sesame, onion, garlic, poppy seeds, and Shito Sprinkle. Brush bagels with egg white and coat with seasoning.
Bake.
Bake at 425°F for 20–25 minutes until golden. Let them cool a bit, then enjoy.
